Once you've tried
your hand at fishing and succeeded, it's time to cook up a simple
and elegant treat, courtesy of one of the finest chefs in the
region.
On the shores of
Seneca Lake in the heart of the Finger Lakes Wine Region,
Belhurst
is a gem that is listed on the National Register of Historic Places.

Chef, Casey Belile has created this scrumptious recipe that makes
the most of a great catch!
Lake Trout
Quesadillas

4 oz Soft fresh
goat cheese (montrachet)
2 Tbs. Grated fresh
horseradish or 1 Tbs. prepared horseradish
2 Tbs. Sour cream
2 tsp. Chopped
fresh dill
8 Flour Tortillas
4 oz. Thinly sliced
cooked Lake Trout
Additional chopped
fresh dill and dill sprigs. Blend goat cheese,
grated fresh horseradish, sour cream and chopped fresh dill in
medium bowl.
Season cheese
mixture to taste with salt and pepper. Heat heavy large
skillet over medium heat. Add 1 tortilla to
skillet and cook until brown spots appear, about 1 minute per side.
Transfer to work surface. Spread 1 Tbs. of cheese mixture over
tortilla. Top with 1/4 of Trout and sprinkle with additional chopped dill.Repeat with
remaining tortillas, cheese mixture, Trout, and dill.
Cut quesadillas
into wedges. Garnish with dill sprigs and serve.
